oatsome balls

Some days a leisurely breakfast just is not going to happen. Feel good knowing you have an instant go to when the best you can do is snack and run.

These delicious oat balls are a great post workout boost or simply a delicious way to get through a busier morning. Full of good fibre to fuel fitness and feed that hungry gut microbiome.

>> Ingredients (makes 12 balls)

2  cups gluten free oats
1 banana
¼  cup almond butter
1 tablespoon chia seeds
1 tablespoon ground flax seed
½ teaspoon mixed spice
3 stoneless dates
3 tablespoons dried blueberries
Pinch salt

>> Method

> Add the oats to a food processer and give a few short bursts to roughen and chop them up, you can go quite fine, but we like some texture to the final balls.

> Remove them and set aside in a large bowl. Add the banana and nut-butter and dates to the processor and blitz until it becomes really smooth.

> Pour over the oats and add the rest of the ingredients to the bowl. Give it all a good mix. After a while it should all start coming together, eventually you will be able to roll into balls – They might feel a little wet but firm up when you chill them.

Keep in the fridge ready for when you have to grab and go.
