nuts for you

This filling breakfast will keep you going until lunchtime and can be made the night before but for the best start to your day fill the house with the aroma of cinnamon first thing with a freshly roasted version. Perfect for a post gym pick me up.

Ingredients (per person)

1/4 cup gluten free oats

1/2 cup mixed nuts

2 tablespoons coconut chips

2 tablespoons coconut oil

2 tablespoons coconut nectar

1 teaspoon cinnamon

Pinch salt

Preheat the oven to 180 and line a baking sheet with parchment paper.

Mix all the ingredients except the coconut chips well and pour onto the lined baking sheet and roast for 12-15 minutes. Take out of the over and give it a mix and sprinle the coconut chips on the top, place back in the oven for 7 minutes.

Leave to cool for 10 minutes and then serve over coconut yoghurt. Enjoy the delicious sweet crunchy nuts and the tropical spice aroma filling your kitchen.
