overnight sunshine oats

A great start to the day with a nutritious breakfast prepared the night before. You can vary the toppings as you would like but here I have used sliced orange for a vibrant antioxidant vitamin C fix and some nuts and seeds for an Omega-3 brain function boost.

Ingredients (this is per portion so double and treble up as required)

1/2 cup gluten free oats

1/2 cup coconut milk

Juice of 1/2 fresh orange

1/2 a mashed banana

1heaped teaspoon ground flaxseed

Toppings
Sliced orange, coconut and some hemp seeds for a lovely crunch.

Before bed mash the banana and mix with the coconut milk, oats, flaxseed and orange juice and leave in the fridge. Simple as that

In the morning top with the sliced orange and seeds for an antioxidant, prebiotic and fibre rich great start to your day.
